Fattoush salad is a Mediterranean salad that embodies all the qualities of a great salad: freshness, colorful and tasty!
I try to cut all of the pieces to an even size whether its a cucumber, pepper or salad. This will help getting nice varied bites of your salad and it makes for a better presentation overall.
Secret ingredients for the vinaigrette are definitely sumac which is a vinegary spice and pomegranate molasses which give a nice tangy and sweet taste to the vinaigrette.
You can eat the fattoush salad as a side with Mediterranean grilled meat recipes like my beef kofta or chicken shish taouk.

Ingredients
Salad
- 1/2 red pepper, diced
- 1/2 yellow pepper, diced
- 1 Lebanese cucumber, diced
- 10 cherry tomatoes, halved
- 1/4 Romaine lettuce, cut into small pieces
- 3 tbsp. of pomegranate seeds
- 1 small red onion, chopped finely
- 3 radishes, sliced thinly
- 2 tbsp. parsley, chopped
- 2 tbsp. coriander, chopped
- 1 tsp mint, chopped
- 1/4 tsp of chili pepper
- Salt and pepper, to taste
Vinaigrette
- 1 tbsp. lemon juice
- 1 tsp sumac
- 1/2 cup olive oil
- 2 tsp red wine vinegar
- 1 clove of garlic, crushed
- 1 tsp of pomegranate molasses (you can substitute with more lemon juice if you can't find it)
- 1/2 tsp of salt
Crunchy Pita Bites
- 1 pita bread
- 1 tsp Zaatar
- 1 tsp smoked paprika
- 1 tsp ground thyme
- 2 tbsp. olive oil
Instructions
- Turn on the oven at 350F
- Cut the pita bread into bite sized squares and put them in a mixing bowl.
- Mix together the Zaatar, smoked paprika and ground thyme.
- Add the olive oil and mix until combined.
- Drizzle the mixture over the bread and make sure its well coated on the pita bites. Put the pita bites on a baking sheet and put in the oven for 10 minutes
- For the vinaigrette, whisk the ingredients together until blended.
- Put the salad ingredients together and season to your taste
- Add about 1/2 cup of the vinaigrette and serve.
