Chicken Shish Taouk

Shish taouk is a traditional marinated chicken shish kebab of Ottoman cuisine that later became part of Middle Eastern cuisine. It is widely eaten in Armenia, Turkey, Azerbaijan, Lebanon, Egypt, Jordan, Syria, Palestine, Iraq, and Israel.

If you’ve eaten chicken shish taouk in fast food joints or restaurants, they all have something in common. The chicken is infused with garlic and lemon! The best way to infuse those flavors is to marinate the chicken for at least 24 hours in a yoghurt based marinade. If you try to marinate for a few hours, you won’t get the same result.

I like to eat shish taouk as a plate alongside mezze like hummus, tzatziki and fattoush (Mediterranean salad) or in a pita sandwich.

Ingredients

  • 2 lb chicken, cut into 1 inch cubes
  • 1 cup of Greek yoghurt
  • 1 lemon, juiced and zested
  • 1 tsp of salt
  • 1/2 tsp of pepper
  • 1 tbsp olive oil
  • 3 cloves garlic, crushed
  • 1/2 tsp nutmeg

Instructions

  1. Mix yoghurt, nutmeg, lemon juice and zest, salt, pepper and garlic together.
  2. Marinate the chicken with the marinade for 24 hours in the refrigerator.
  3. Skewer the chicken and grill on the BBQ or on a griddle. Cook around 4 minutes per side.
  4. Serve with hummus and fattoush (Mediterranean salad) as a plate or in a pita sandwich.
